This wintry weather sure puts the BRR in Byrne Dairy! How about some hearty, homemade soup made with Byrne Dairy Heavy Cream to warm up this weekend? Customer Account Manager Erika shares her recipe for Homemade Tomato Soup!
Ingredients for Homemade Tomato Soup featuring Byrne Dairy Heavy Cream
- 10 Tomatoes
- 2 Red Bell Peppers
- 2 Yellow Onions
- 1 Bulb of Garlic
- 4 Leaves of Fresh Basil
- ¼ cup of Olive Oil
- 2 tbs of Balsamic Vinegar
- Pinch of Salt and Pepper
- ½ cup of Vegetable Stock
- ½ cup of Byrne Dairy 36% Heavy Cream
- ¼ cup of Freshly Grated Parmesan Cheese
Directions
- Preheat the oven to 400° F.
- Cut your tomatoes, peppers and onions into quarters and put in an oven-safe dish.
- Cut the top off a bulb of garlic and place in the middle of the vegetables in the baking dish. Add basil.
- Pour some olive oil and balsamic vinegar over all the veggies and garlic, then sprinkle the salt and pepper over the top.
- Roast these in the oven for about 45 minutes.
- Once the veggies are roasted, add them to your blender, ensuring all the juices from the dish get poured in to keep the flavor. Be sure to squeeze all the roasted garlic out of the bulb into the blender.
- Add vegetable stock and blend until completely smooth.
- Transfer the mixture to a pot and stir over medium heat on the stove until it gets to a light simmer.
- Add your Byrne Dairy Heavy Cream and grate your parmesan cheese while stirring.
- Feel free to pair this with a grilled cheese sandwich and enjoy!
